Homemade Healthy Granola Bars

My daughter absolutely LOVES any kind of "bars" as she calls them. And as most of us grown ups know, they are loaded with high fructose corn syrup, sugar and who knows what else. I decided I needed to stop being lazy and make something less expensive and much more nutritional. Looking at dozens of recipe options, I ultimately used what I already had at home.

Here's what I had:

-1/2 Cup Natural crunchy Peanut butter
-1/2 Cup Almond butter
-3 Cups Oats
-About 1/3 Cup honey {add more if desired}
-2 TBSP Flax seed
-1/3 Cup shredded coconut
-Slivered almonds
-Chopped walnuts
-A generous handful of dried goji berries (very good for you!)
-A mixture of nuts/dried fruits/chocolate chips that I had from the farmers market
-1 TBSP vanilla extract

So as you can see granola bars are very versatile and you can do whatever you want!

Instructions:

Melt the PB and honey in a sauce pan.
Mix all other ingredients in a large bowl.
Pour PB and honey over the dry mixture and stir until all combined.
Place in a pan lined in parchment paper.
Place another sheet of parchment paper on top of the flattened granola and press it down (ideally with a rolling pin, but I used my hands and pushed down....really hard.
Let them set for an hour or more until they harden and then slice with a pizza cutter.

This was actually really easy and not very time consuming considering I got 12 bars out of it. I feel much better serving this!! And they are really good! I kind of want to keep them for myself ;)
