Jambalaya in the slow cooker


Oh boy was this yummy.....

I love love southern/Creole/Cajun food. Well, let's be honest I love MOST food. But anyways I thought I would follow a recipe to make this annnnd of course I went off on my own and ended up with things from random Pinterest recipes and some of my own additions.

The amounts do not make much sense....because I am not a chef or a cook book author and I just put whatever I feel like putting in, but it all worked out:


-1 half onion chopped
-1 half green bell pepper
-3 stalks chopped celery
-3 chicken tenderloins
-Handful of shrimp
-1 turkey polska sausage (kielbasa)
-1 cup of chicken broth
-2 cans of diced tomatoes (I added a couple fresh ones that I had as well)
-3 garlic cloves minced
-2 cups of cooked rice (I made it in the rice cooker)
-1 bay leaf
-2 tsp Cajun/creole seasoning
-2 tsp Parsley
-2 tsp Oregano
-About half to 1 tsp Thyme
-About 1/2 tsp Cayenne Pepper
-1/2 tsp Onion powder
-1/2 tsp Garlic powder
-About 1/4 tsp Ground Mustard 
-Salt and pepper to taste
-About 1 to 2 tbsp butter 

I chopped up the vegetables and put them in the crock pot with the chicken broth, tomatoes, seasonings, herbs and the raw chicken that I cut up. Then I let it cook for 30 mins or so before adding the turkey sausage. Next after a couple hours I added the raw shrimp and then the rice from the rice cooker. I let it cook awhile longer and it was good to go!

-A dollop or sour cream in each individual serving takes some of the heat down and well, makes it even more creamy and amazing....


It was a bit spicy for my little fam so I halved the amount of cayenne (above) and maybe a little less Creole seasoning could be used.

But man I LOVED it. So so good and full of flavor.
My daughter was singing my praises [although she had to stop eating after awhile because of the spicy-ness].

I will SURELY make this again soon!
