Turkey Meatloaf


I am just loving my "Eat this, Not that" book! I have been using these recipes as a base and then making them my own [which is the fun part]. Such a rebel right? Haha.....

So I took a photo of the recipe if you care to follow it, however I am going to put down my version as well.

I started much like it says in the recipe:
-Add the chopped onion and minced garlic to a saute pan with some oil.
-Cook until they are soft.
-Add a can of Contadina tomato sauce [I ALWAYS buy that brand! I stole it from a friend hehe]
-Cook until thickened a bit. [Oh and I added some white wine]
-Next I took the turkey, added 1/3 cup bread crumbs and 1 egg. The recipe says to use 3lbs of turkey, I only had 1 so I had to adjust.
-Mix the turkey, crumbs, and egg and add salt and pepper. Next add MOST of the tomato mixture.
-Leave some tomato mixture in the pan and add some chicken broth and more white wine to it and thicken it a little bit. 
-Form a "loaf" in a pan and pour the rest of the tomato mixture over the top. I cooked mine at 350 degrees for about 30 mins.

I adapted this recipe to fit what I already had in the house. Also, we were starving to death so I made it as fast as possible!

Okay okay I know it looks horribly unappetizing in the photo, especially since I had already cut out a serving, and I am not good at forming things into "loaves". 

This was really yummy! My daughter loved it and Eric liked it as well. 
I served it with baked sweet potatos and peas.
